Harvesting Ant Eggs Making Sticky Rice Cakes and Fried Spring Rolls with Ant Egg Filling
Harvesting Ant Eggs
Identify the Right Ant Species: Not all ant eggs are edible. In Vietnam, the eggs of the red weaver ants are commonly used. These ants build nests in trees, often in citrus orchards or forests.
Preparation and Safety: Wear protective clothing to avoid ant bites. Bring a container with a lid to collect the eggs.
Harvesting Process:
- Locate the nests in trees.
- Carefully cut the nest off the branch using a knife or scissors.
- Place the nest into the container and close the lid quickly to prevent the ants from escaping.
- Once home, gently shake the nest over a sieve to separate the eggs from the debris and ants. Rinse the eggs with clean water and let them dry.
