Harvesting Ant Eggs
- Identify the Right Ant Species: Not all ant eggs are edible. In Vietnam, the eggs of the red weaver ants are commonly used. These ants build nests in trees, often in citrus orchards or forests. 
- Preparation and Safety: Wear protective clothing to avoid ant bites. Bring a container with a lid to collect the eggs. 
- Harvesting Process: - Locate the nests in trees.
- Carefully cut the nest off the branch using a knife or scissors.
- Place the nest into the container and close the lid quickly to prevent the ants from escaping.
- Once home, gently shake the nest over a sieve to separate the eggs from the debris and ants. Rinse the eggs with clean water and let them dry.
 
Making Sticky Rice Cakes with Ant Egg Filling
- Ingredients: - Sticky rice (glutinous rice)
- Ant eggs
- Coconut milk
- Sugar
- Salt
- Pandan leaves or banana leaves for wrapping
 
- Preparation: - Soak the sticky rice in water for at least 4 hours or overnight.
- Cook the sticky rice with coconut milk, a pinch of salt, and some sugar until it's tender and fragrant.
- Sauté the ant eggs with a little oil, garlic, and a pinch of salt until they are lightly browned.
 
- Assembling the Cakes: - Lay a piece of pandan leaf or banana leaf on a flat surface.
- Spread a layer of cooked sticky rice on the leaf.
- Add a spoonful of the sautéed ant eggs on top of the rice.
- Fold the leaf over the filling to create a neat packet. Secure it with a string if needed.
- Steam the wrapped cakes for about 30 minutes until they are heated through
